🍲 Peggy’s Gut-Healing Bone Broth Vegetable Soup

A warm, bloat-soothing soup to nourish your gut and calm inflammation

Gather all the goodness

Ingredients:

  • 2 tbsp oil from sun-dried tomatoes in olive oil (no seed oils!)

  • 6 celery stalks, finely chopped

  • 4 carrots, finely chopped

  • 1 cup riced cauliflower

  • 2–3 cloves garlic, minced

  • 6 cups bone broth (chicken, beef, or turkey—your choice)

  • 3.35 cups of frozen baby corn

  • 4 cups of frozen broccoli

  • 3 cups Broccoli Florets, Cauliflower, and Carrots

  • 24 Tbsp julienne-cut sundried tomatoes

  • 2.68 cups frozen green beans

  • 2.68 cups cut frozen kale

  • 1 15-ounce can of Black beans, drained

  • ! 15-ounce can of Chickpeas

  • 1 package (340 grms)   frozen riced cauliflower

🌿 Seasonings (add to your taste):

  • Oregano

  • Parsley

  • Onion powder

  • Cumin

Sea salt + pepper

Add any vegetables you want and leave out what you don’t. Make it yours

 Instructions:

In a large soup pot, heat 2 tbsp of oil from your sun-dried tomatoes in olive oil (this adds flavor and gut-friendly fats).

  1. Add celery, carrots, riced cauliflower, sundried tomatoes, and garlic. Sauté on medium heat until soft and fragrant, about 5–7 minutes.

  2. Pour in 6 cups of bone broth and bring to a gentle boil.

  3. Add 1 cup of coconut milk.

  4. Add your chosen vegetables (frozen or fresh) and stir well.

  5. Simmer for 10–15 minutes until everything is tender.

  6. Season generously with oregano, parsley, onion powder, cumin, salt, and pepper—listen to your intuition here!

If you’d like more broth or a thinner consistency, go ahead and add more bone broth.
