Gut Healing Chicken Ginger Soup

Ingredients - gather the goodness

  • 1 whole pasture-raised chicken (or 2 lbs bone-in thighs)

  • 2 tbsp apple cider vinegar

  • 1 large onion, quartered

  • 4 cloves garlic, smashed

  • 2–3 inches fresh ginger, sliced

  • 3 carrots, chopped

  • 2 stalks celery, chopped

  • 1 bay leaf

  • 1 tsp sea salt (add more to taste)

  • Optional: fresh parsley, turmeric + pinch black pepper

Instructions

  1. Place chicken in a large pot. Add ACV and cover with cold water.

  2. Let sit 30 minutes.

  3. Bring to gentle simmer; skim foam.

  4. Add vegetables, ginger, garlic, bay leaf.

  5. Simmer 2–3 hours (longer if using whole chicken).

  6. Remove chicken; shred meat.

  7. Strain broth if desired; return meat to soup.

  8. Season with salt and garnish with parsley.

Storage:

  • Fridge: 4–5 days

  • Freezer: up to 3 months
