Gut Healing Chicken Ginger Soup
Ingredients - gather the goodness
1 whole pasture-raised chicken (or 2 lbs bone-in thighs)
2 tbsp apple cider vinegar
1 large onion, quartered
4 cloves garlic, smashed
2–3 inches fresh ginger, sliced
3 carrots, chopped
2 stalks celery, chopped
1 bay leaf
1 tsp sea salt (add more to taste)
Optional: fresh parsley, turmeric + pinch black pepper

Instructions
Place chicken in a large pot. Add ACV and cover with cold water.
Let sit 30 minutes.
Bring to gentle simmer; skim foam.
Add vegetables, ginger, garlic, bay leaf.
Simmer 2–3 hours (longer if using whole chicken).
Remove chicken; shred meat.
Strain broth if desired; return meat to soup.
Season with salt and garnish with parsley.

Freezer: up to 3 months
